How to Make Simple Mango Cake:
I followed this recipe to make this mango cake.
Ingredients:
For Dough:
Butter 75g (1/3 cup)
Sugar 60g (1/3 cup)
(Note: the reason sugar and butter is 1/3 because butter and sugar has different weight butter is heavier than sugar. but if u have scale use that.)
Vanilla Essence 1tsp
Salt pinch
Eggs 2
All-Purpose Flour 150g (1 & 1/8 cup)
Baking Powder 1tsp
Whipping cream or heavy cream ½ cup
Mangoes 2 big mangoes
Icing
sugar (or powdered sugar)
Instructions:
- Mix butter, sugar and eggs first. Beat until it’s soft and fluffy. Add eggs one at a time and beat well after each addition.
- Then add flour and baking powder and mix well. Until it become soft paste.
- Butter the round pan, I am using 8 * 9 inches pan.
- Preheat the oven to 180c and bake for 15mins or until it is cooked and light golden.
For whipping cream, I add ½ cup of cream, 1tbsp of icing sugar (or you can add more sugar if you like more sweet taste) and 1tsp vanilla essence. I whisk it for 5min until it is thick.
Now add the cream of top of base cake layer. Thickness of the cream depends how much you like.
For Mangoes puree, peel 2 mangoes and cut into pieces. Use blender to blend the mixture. Add icing sugar if the mangoes are not sweet it’s totally up to your taste. Don’t blend mango puree too much else it will be liquid let it be little thicker so that it will not run off the cake.
Don’t remove the side of the spring pan while adding mango puree on top. After this you have to let it in the fridge for 6 to 7 hours, depends on the cooling. Wait until the mango puree gets thicker in the fridge so that it will not run off. You can also put it in the freezer for an hour.
In the middle layer you can also use cream cheese if you like instead of whipping or heavy cream. Both taste good.
